We are now growing our own mushrooms!
A little bit fungii obsessed here at Brecklate at the moment, such a fascinating subject and so much more to learn, but trials are going really well and we'll be scaling up production very soon.
We are using food grade plastic tubs (ex-mayonaise tubs donated by a local hotel) which means that they can be re-used - most mushroom growers use single use plastic bags. We are using straw as a substrate for growing our blue oyster mushrooms and a mixture of sawdust and straw for our king oysters mushrooms. Our substrate is supplemented with discarded coffee grounds - a waste product (less than 1% of the actual coffee biomass ends up in the cup). Oyster mushrooms are not just tasty, they are really healthy too - rich in protein and fiber and containing niacin and riboflavin. They also contain a small amount of magnesium, zinc and selenium, an antioxidant.
